Not so long ago, I graduated from culinary school–but not before André Soltner himself told me to my face that my vegetables were undercooked.

My very Chinese instinct to let greens retain their bite is a curse in a French kitchen but a blessing in my own. It turns out I’m a natural with sprouts, coaxing out their hazelnut flavour and stopping well short of releasing the sulphurous compounds that have destroyed the reputation of many a cruciferous vegetable. Properly prepared (tender but still sprightly), a Brussels sprout is unexpectedly sweet, a sort of candy for grown-ups, ready to caramelize bold and brown in your frying pan if you’ll just stop torturing it in your steamer. It really only needs a publicist.
