This is a dish I feel the average Russian palate would swoon for. Perhaps I’ll put my theory to the test when an old friend of mine comes to visit this Thursday and takes me to see Mumiy Troll at Webster Hall.
No longer Mille Crêpes but Тысяча Блинов, the pancake stack encases smoked salmon and chives in place of vanilla pastry cream.
Substitute dill for the chives and smetana for the chevre and you’ve got a dish that could take Moscow by storm. Otherwise, and under other regimes, it’ll make an elegant little brunch dish for the egg-weary.
Make as many savoury crepes as you can manage. Sandwich them all together with goat’s cheese (thinned with sour cream or milk for spreading), and alternating layers of shredded salmon and minced chives.
Et voilà.
